ascorbic acid
(English) Chemically defined as the J-lactone of a hexonic acid having an enediol structure at carbon atoms 2 and 3. A deficiency of this vitamin in fish affects the normal production of collagen resulting in spinal and hyaline cartilage abnormalities and reduced wound healing ability. Also known as Vitamin C.
